In my opinion, I would go for at least a 5 gallon when raising fry. Mollies are a bit larger than guppies so you'd have to take that into consideration when raising them to adulthood.

Your 1 gallon idea could be pulled off. The tank would have to be cycled and maintained properly with partial water changes. You will be feeding a lot and a 1 G gets dirty real quick.

Last thing, your mollies will keep producing so even if you have 3 fry now, you might have twice that many a month from today. And if you plan to raise them, then your 1 G idea is really going to be hard to do.
