Am I feeding my ghost shrimp enough?

This is the first time I have ghost shrimp and want to make sure I am feeding them enough. I have two in a 5g tank with my betta so they do not get to eat any leftover food because I feed my betta pellets and he eats them all. What I have been doing is feeding them one sinking shrimp pellet every other day. Is this too little or too much? I cannot really see if they eat it all or not because they carry it around the tank and sooner or later, I don't know where they left it. And then it is hard for me to find because it blends well with my sand color gravel.

If you can't witness the shrimps eating, then look for a dark mass accumulating behind their eyes. It looks like it would be their brain, but it's actually the accumulation of food they've consumed. This would be one way of measuring their consumption. As long as you know food is at the bottom, there's no need to feed any more. They're very good scavengers. In a 5gallon tank, they won't have any trouble find food.
