Ammonia, Nitrite, Nitrate?

Hi,
I'm a beginner with fish and to be honest with you I have no idea what ammonia, nitrite, and nitrate even are... I don't even know if I'm spelling them right... so if you have time could you please explain them so that I can take better care of my fish? Thanks for all your help!
