what would be the correct amount of water for a change in a 125gal tank

anything more than zero. It all depends on what you are doing.....a regular 10% waterchange every month is a minimum I would think. As stated it depends on what type of equipment you are running, how efficient your skimmer is, what the load in your tank is etc........

Myself I do a 30G change every 2 weeks on a 150G. I am thinking of changing to once a month (salt is getting really expensive) and because I top up at least 15G per week with RODI water. I run 2 skimmers and a scrubber with live rock/sand.

Once you have a stable tank a monthly change is usually OK. Just take into consideration to what lorna stated. Probably need to supplement various elements though.
