I used to feed my GT pellets and flakes which it grew on. Its about 4 or 5 inches right now and about a month ago it ate a fish. Recently, Ive noticed fish disappearing. I went on vacation and the tank was nearly bare except for him/ her. I was just wondering that if a GT starts to eat meat, will they ALWAYS be inclined to do so?

No not always. I'm sure it will eat any food that is put infront of him. Meat is good, but a good flake food is also good to mix into the diet. So try keeping him on Flakes with a snack of meat every once in a while.

What kind of fish was with this GT anyway?

If the other fish in with it are smaller than it than if just might have figured out that it can eat them. Try only keeping fish that might not be ate so easily. Also it would help to vary the diet quite a bit to be sure that he has plenty of choices of food to keep it happy other than your other fish.
