So my uncle and me are redoing his outdoor pond next week. I know he gets goldfish everytime. Are there any other fish that we can get? I cant find any Koi's near us so not them. Can Pleco's live in there? It freezes over in winter and the goldfish are fine come spring. What species of goldfish besides common are suited for that?

With all the other fish you say you LFS has I can't believe they don't have Koi, but I guess that is beside the point - I will bet your Uncle doesn't want to pay the price some of the types of pond fish cost. Just Google pond fish and you will see what I mean. I bought my first horse for less than what they want for some of those fancy goldfish!

Plecos definitely not. Goldfish are temperate fish and survive cold winters well, plecos are from the tropical amazon which never sees ice or snow. You would also never see a pleco in a pond.

Goldfish are definitely the easiest choice. Koi require specialist equipment since they're so messy and often don't survive a very harsh winter (I lost mine year before last to the cold). They also need huge ponds a minimum of 3ft deep.

Tropicals are a no-go. How big is the pond? Is it filtered? Does it have predator protection (nets to stop herons, etc)?
