As far as when I noticed when my fish got ich their color faded and you will start to see white sugar crystal like spots which usually first start on their tail fin and if it progresses then it can go all over the body. Ich is a parasite that attaches itself on the body and I believe it feeds on the fish itself kind of like a leech and the white spot is actually a blister which the parasite is in and it will fall off and lay eggs on anything in the tank and when the egg hatches it releases tons of new parasites and the process starts over. The only way the parasite can be killed is just after they hatch and they are looking for a host. Well I tried to explain it to the best of my knowledge if you need so help curing ich let me know and I will explain how I did it and I'm sure lots of other people can tell you other ways too.

I used to have problem w/ ich, just after I did some W/C, I realize that using slightly warmer temp when doing W/C will reduce the chances of getting ICH, which ussually become active if your fish is stressed and lose its slime coat or if there is big change in tempt.
Matt your place is pretty close to where I live, East Lansing.
