Yeah when I was first cycling my tank I used to always go and get my water checked by the lfs. And they usually said not to feed the fish for 2-3 days. After the 3rd day check your ammonia levels.

Even better is to use the fishless cycling method which avoids subjecting fish to even the slightest ammonia and nitrite levels.

If this is an established tank, then something is going on to raise ammonia levels (dead fish, over feeding) and it needs to be corrected right away.

Less food will help.
Add a bag Zeolite to your filter to remove some of the ammonia.
Add a filter from an extablished tank to help reduce ammonia.
Regular water changes.

Like Ecotank said, if this is not a new tank, check for excess food in the gravel/sand, dead bodies, and remove.
