my first proper fish was a croaking gourami and it had dark stripes all over when mating or getting defensive over its bubble nest , dont know about honeys though
gourami's tend to change colour a lot depending on their mood, i have an opaline which will sometimes be an almost white when he is scared, but will turn a deep rich blue when defending his territory, so its probably normal.
Yesterday he/she was a happy solid Honey colored Gourami. Today, he/she is a happy Honey with chocolate stripes colored Gourami.
