Most salt is built with a chemical makeup dsigned to make seawater from 'average' water , so some levels will come up low if RO is used. Alk is one of those. Also alk is not usually run high as it's about the cheapest thing to buffer.
I use seachem marine buffer, I have also used baked and unbaked baking powder which is pure sodium hydrocarbonate. If you are really are chucking in a gallon a day (which is quite possible) you might consider a very weak kalk solution
