Creamed spinach:
4 tablespoons butter
5 cloves of garlic, chopped up
2 heads of spinach with stems removed, washed, dried, and coarsely chopped ( save a few bits for your fish!)
1 cup of heavy (or also called whipping) cream
½ cup of grated parmesan, if you want, and you do!
In a large frying pan over medium heat, melt butter. Add garlic and sautee – meaning stir lots until aromatic but don’t burn. Then add spinach. Cover and cook, stirring occasionally, until the spinach is fully wilted (4-5 minutes). Remove from heat and let cool a bit. Then you want to get as much liquid out of the spinach as possible – I find the easiest way is to put it in a fine-meshed strainer and push the liquid out with the back of a spoon.
Meanwhile, thicken the cream in a pot over medium heat. Stir, and keep stirring, until it gets really gooey. Then add the parmesan, let it melt into the cream. Finally, add the spinach, make sure it is all combined well. Season with lots of pepper and salt.
Voila!
And if you really want to pimp your spinach, you can sautee the garlic and spinach in bacon fat or lard. Yum.
