Well, I won't give you a species, since that is a matter of personal opinion and esthetics, but I can suggest what to look for. You need to find something that tends to have a short, violent life and uses schooling to avoid being eaten. Something like a blue tetra is a good, active schooler. Wild fish (ignoring the ethics of this) tend to be better schoolers, since they have had to deal with the reality of being eaten. I mean, cardinals maybe a bit boring on the movement side, but wild ones are excellent schoolers (all move at the some time, same direction etc) which you can see by them moving away from you in the tank at the fish store.

But ultimatley, I guess you just need to look around, and see which fish you like.
