A week ago I lost a cat fish. I wasn't sure if it was a disease or if someone had attacked. Both eyes were missing. I purchased two more because the one that I had left was scrambling to hide everytime I came into the room. My husband thought they were social fish. In less than 24 hours I have now lost the two new catfish. Both had missing eyes. I also purchased 6 neon tetras. Two are left. I feel sick to my stomach. The big fish in the tank are 1 pleco, 1 angel fish, 1 ghost knife...I am suspecting the ghost knife. What do you think? Are my options pretty much limited to NOT getting any other fish at this point?

Black ghost knife is almost a definite. They're predatory and should not be housed with small fish such as neons. How big is it? Depending on how big your angel is, it might also be a culprit for eating the neons.

Also, the knifefish will eventually out-grow your tank, reaching roughly 50cm.

aside from the knife, I would suspect the intake of a HOB filter...
cover the filter intake with a foam/sponge to eliminate any risk of having the fish getting a body part stuck there...
