Curious naming question.

Ok, this has something to do with the latin names of fish.
I'm under the idea that the latin name has something to do with what the fish is like/behaves.

Earth Eaters are under geophagus, correct?

GBRs are Mikrogeophagus ramirezi

So does that mean they are earth-eaters of some sort? Just mini? Or am I looking too deep into this?

Your actually right. There scientific name means "Small Earth-eater"

They don't actually though. The eartheaters actually sift the "earth" through their gills. Rams don't do this.

No...they pick up substrate and spit it back out when they're done with it, not sift it through their gills
