Every gourami I've had has been a bully. Picking fish apart, nipping, etc. After the last one killed off everything else in the tank, I swore I'd never get another one.
As far as betta's go, my betta flares at my pristella tetra all the time. I'm guessing it's because that is the next biggest fish in the tank. Good thing the tetra is way too fast to get hurt. Fancy guppies are just slow fish in general. They wouldn't be able to get away from a betta or crayfish attack fast enough. And the betta would definately see that big colorful tail and think it was another betta.
To cycle your new tank faster, add some of the gravel from your larger tank.
