If it were me, I would get either some cherry shrimp or some small fish that breeds easy in a 10 gallon. Reason being that the students could watch the fish breed, and raise the young (at least to a point). There are some Tanganyikan cichlids that form family groups and the older fry will help care for the young fish. Neolamprologus multifaciatus is a wonderful shell dweller that exhibits this behavior to a degree. They are also very easy to breed. The cherry shrimp are really easy to breed and either would provide a great learning experience.
You can't do a lot with a 2.5 gallon tank.
